Can I create a ‘beam system’ that is following the pitch of the roof rather than changing afterwards?

Yes, when sketching the area of which will be the beam system, use ‘pick lines’ to pick the face of an object on the desired work plane Note it looks like it hasn’t worked as the pink lines only show on one plane, once you have accepted it you will see the difference.
